Open tacos

I have already organised tomorrow nights dinner for you and it will only take 15 mins to make - from start to finish!  Yep, that's right and your kids will love it too.

We have this dinner a lot, especially on a Friday night where it is fun to sit around, chatting, passing dishes and it creates a great family atmosphere. My little fussy eaters really enjoy this meal and there is rarely anything left on their plates.  It is up there with the most requested dinner in my house along with pizza and chicken nuggets but at least this meal is of the healthy variety.

Sometimes, instead of using corn chips I use Lebanese bread which is cut up and baked in the oven for a few mins until crunchy.  So get to ALDI, stock up and let me know how you go!


OPEN TACOS
  • 1 Tbspn oil
  • 500g lean beef mince
  • 300g jar of salsa or 500g bottle pasta sauce
  • 4 lettuce leaves
  • 3 tomatoes
  • 2 cups grated cheese
  • Lebanese bread or corn chips
  • 300ml sour cream
  • 1 avocado (optional)

Step 1 - If using Lebanese bread, cut with your scissors into pieces & peel the 2 layers apart.  Place on a baking tray & bake in oven (approx 200 degrees) for 5 mins or until crunchy. Remove & set aside. 

Step 2 - In a frypan over high heat, add oil & cook mince until brown.  Add salsa or pasta sauce (or both if you have a large family), bring to the boil & cook for 2 mins. Remove from heat & place in a bowl. Set aside. 

Step 3 - Finely slice lettuce leaves & place in a bowl or on a platter.

Step 4 - Finely dice tomatoes & place in a separate bowl or on a platter.

Step 6 - Place Lebanese bread, mince mixture, lettuce, tomatoes, cheese, sour cream & avocado on the dinner table & let each family member assemble their own meal. Yummo!!
