Creamy chicken & mushrooms
- 2 Tbspn oil
- 1 large onion, sliced
- 1kg chicken thigh fillets
- 100g mushrooms, sliced
- 420g can cream of mushroom soup (The Soup Co.)
- 1/3 cup mayonnaise (Colway Real Mayonnaise)
- ½ cup chicken stock
- 1 zucchini, thinly sliced
Step 1 - In a large frying pan over high heat, add oil. Cook onion until almost tender.
Step 2 - Add chicken & cook for approx. 10 mins.
Step 3 - Add mushrooms & cook for a further min.
Step 4 - Add soup, mayonnaise, stock & zucchini. Stir through & cook for a further 5 mins or until chicken is cooked through.
Step 5 - Serve immediately or cover & store in fridge until required. Reheat in microwave.
